Who doesn’t love a hearty breakfast on a lazy Saturday morning? I know I do!
However, on one side I have Target replacing what looks like the entire store with bathing suits, and on the other side I have my family reminding me that “boat season is right around the corner!” Moral of the story here is I really want to buy a new bathing suit this year.
So! That means my 800+ calorie breakfast from Cracker Barrel (goodbye Mama’s Pancakes 😦 ) on the weekends is going to need to be swapped out for something else on Saturday/Sunday mornings.
I knew Amanda in high school and I was so excited to see that she had started a food blog! I read through the first three recipes on her site at the time and I just knew I had to get her over to TheBigBlondeBrain to share with all of you just the tip of her very yummy iceberg. First up is her Clean Banana Peanut Butter Pancakes!

Nothing beats homemade pancakes on a Saturday morning, am I right? But I’ll go ahead and admit that I made these for myself on a Tuesday. I was craving pancakes but had to stick to what we had in the house and keep them healthy. I’ll splurge and have buttermilk pancakes with syrup on a Saturday but not on a Tuesday! So I literally scrounged around my kitchen to see what I could throw together to make some decent pancakes. And can I tell you I ended up with pancakes that were way better than decent.. More like amazing! So I just had to share the recipe with you.
I also recently discovered peanut butter powder. If you’re like me and have a slightly obsessed relationship with peanut butter but hate all the calories then you HAVE to try the powder form. The kind I’ve been eating is called PB fit from Better Body Foods. It has 90% less fat that normal peanut butter. Yes I said 90%!!!! And it tastes the same! I’ll admit it isn’t exactly the same consistency by itself.. You mix the powder with water to form a thicker consistency. And it’s not going to be as rich as the peanut butter you’re used to but it still has the same flavor and when you add it to smoothies (or pancakes) you really can’t tell the difference!
I bought a container the size of my head from Costco and I’m sure glad I did because I am blowing through it. I add it to my smoothies every morning and basically wherever I can add it in, I do. Prime example, these pancakes. I love the banana peanut butter combo so this recipe is surely one of my new favorites.
Recipe- (Makes about 4-5 pancakes)
2 very ripe bananas
2 tablespoons peanut butter powder (PB Fit or PB2)
2 egg whites
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon cinnamon
1 tablespoon coconut oil
1 tablespoon peanut butter powder
1 tablespoon water
Mash the bananas in a large bowl. Add in the peanut butter powder, egg whites, vanilla, salt and cinnamon. Mix until combined. Heat coconut oil in a pan over medium heat. Pour small amount of batter into pan. Flip in a few minutes or when bubbles start to form on top. Continue until all batter is gone.
For the topping, mix the tablespoon of peanut butter powder with a tablespoon of water. It will be pretty runny which is what you want. Pour over pancakes. Top with sliced banana and dash of cinnamon.
